Produced by Melly Barajas at her women-led distillery in Jalisco's iron-rich highlands, this spirit showcases meticulous attention to every production stage. Premium agave, harvested at peak maturity after 9-10 years, undergoes slow steam cooking in earthen ovens followed by natural fermentation in steel vats. The resulting blanco is aged eight months in lightly-charred, previously-used American whiskey barrels—a deliberate choice that imparts subtle oak and whiskey notes without overwhelming the agave's character. Distilled twice in steel stills using traditional methods, La Gritona Reposado delivers refined complexity with restrained oak influence, reflecting the expertise of its dedicated production team.
