Erstwhile Jabali Ancestral Limited Edition 2023 represents a rare rescue of mezcal heritage. Only 100 liters produced from this notoriously difficult agave varietal, which generates foam throughout production due to naturally occurring saponins. This batch required fifty-five pounds of raw Jabalí agave per liter—demanding significantly more labor and yielding far less mezcal than other varieties.
Crafted by master mezcalero Silverio García Luis, this 2023 release revives a García family tradition dormant for nearly fifty years. His father, Don Lencho, pioneered an ingenious production method during Oaxaca's prohibition era, using a hollowed quiote (agave flowering stalk) instead of a copper turbante to evade military seizure of distillation equipment.
A testament to ancestral technique and agricultural persistence, this limited expression honors both the plant's complexity and the family's defiant legacy.
