ON THE NOSE, Texas Rye Bottled in Bond balances spruce-tip tea, candied fennel and gingersnaps before leading to cooling notes of mint chip ice cream and raspberry glaze. ON THE PALATE, dusty notes of graham cracker crust, cardamom and cedar chest fold before well-articulated notes of carrot frond and dark chocolate espresso bean. Nutella and apricot preserve on rye toast linger for the long and dry finale.

Balcones Texas Rye Bottled in Bond is a 100% straight rye whisky crafted entirely in Waco, Texas. Distilled from a carefully selected blend of 91% raw Texas Elbon rye and specialty German Cara rye, this spirit is milled, mashed, fermented, distilled, and matured on-site in copper pot stills. Aged a minimum of four years in a US bonded warehouse, it delivers a refined flavor profile with notes of dark chocolate, espresso bean, mint chip ice cream, and raspberry glaze. On the palate, expect dusty graham cracker, cardamom, cedar, and carrot frond with a long, dry finish. At 50% ABV, this award-winning expression represents the pinnacle of Texas rye craftsmanship and the unique terroir of the Lone Star State.

In 2008, Texas was not known for whisky. There was no blueprint for how to make it here. No one to follow, no path in place. As a team of makers motivated by curiosity and intentionality, we decided to wander into the world of distilling in our home state. We took inspiration from our surroundings and set out to make something meaningful. Now, a vision that started in an old welding shop under a bridge in Waco has transformed into an award-winning distillery.
